ANYONE USE COVER CROPS IN THEIR GARDEN?

I am trying to get into gardening, and I have read that the use of cover crops can help turn hard clay into soil.  The organic matter, and deep root systems help loosen the dirt for your crops.  Has anyone tried this in a backyard garden?

Also would like to know if anyone has had good luck growing garlic, onions, or strawberries around Amarillo.  If so, did you used special varieties for this area?
